Massimiliano (Max) Bagaglini features regularly on Today with Maura and Dáithí.
Max has been cooking since was a kid in the kitchen with his “Nonna Maria” doing everything from scratch! Love and passion for good food and quality ingredients , as his family has been in the food business for many generations. His passion became his business and he’s working in the hospitality industry for more than 20 years now.

In 2016 he started the Italian cheese production “Once Upon a Cheese”, supplying hotels, restaurants and supermarket.
He also did some lessons in MTU, Secondary and Primary schools with cheese making and pasta making classes.
From that the idea in 2020 to open a cookery school but unfortunately COVID came and all the plans had to stop.

And it looks like he made the right decision!!!
